Caprese Gourmet - The taste of summer and Italy in every mouthful
My gourmet version of the classic Italian Caprese salad.
Ingredients
- 8 pcs tomatoes
- 200 gram fresh mozzarella
- 1 bunt basil
- 1 tbsp good olive oil
- 1 tsp salt
- 1 tsp sugar
- 0,5 pcs lemon (juice only)
- 1 tbsp honey
Accessories
- Parmesan chips
- Aioli
- Pesto
- Focaccia
Step 1
Cut the tomatoes in 2 and remove the runny core. Finely chop into small cubes and let them drain. Add salt and sugar and leave for 30 minutes before mixing with the rest.
Step 2
Cut mozzarella into small cubes and place in a colander so some of the moisture drains away.
Step 3
Mix the tomatoes, mozzarella and finely chopped basil. Add lemon juice and honey. This gives a little hold so it can be made like a pretty tartar if you want.
Step 4
To make parmesan chips, grate the parmesan on a baking tray lined with parchment paper. Bake for 8-10 minutes at 180 degrees until the cheese has melted and begins to turn golden.
