Cauliflower and broccoli soup with bacon - Fill up some energy in the autumn weather!

When autumn comes, delicious Norwegian cauliflower abounds in the shop.

  • 1 pcs cauliflower head
  • 1 pcs broccoli
  • 3 pcs shallots
  • 150 gram bacon
  • 5 dl chicken broth
  • 5 dl semi-skimmed milk
  • 2 dl whipping cream
  • salt and pepper

Cauliflower is both healthy, good and cheap at this time of year. I use cauliflower in many dishes. One of my favorite dishes with cauliflower is soup. The broccoli is also full of nutrients so this combination can replenish some energy in the autumn weather. When you top this dish with crispy bacon, it becomes a full meal and the salty bacon goes well with this soup.

When you are going to make this soup, it is smart to start by frying bacon in the pan you are going to make the rest in.

When the bacon is done, pick it out and put it on a piece of paper for later. Now add finely chopped shallots directly to the bacon fat.

Divide cauliflower and broccoli into small pieces. I also use the stem when I make soup.

Lay off some nice bouquets of cauliflower and broccoli to be used for garnish. Add the rest to the pan and pour over all the liquid.

Let cook for 35 minutes and run smoothly with a hand mixer. Season with salt and pepper.

Find a small pan and cook the "nice bouquets" for a few minutes. I like that there is a bit of chewing resistance in the pieces.

Find some soup bowls and fill up with soup. Garnish with the lightly cooked cauliflower and broccoli bouquets and lightly crispy bacon. I like to grind some black pepper on top as a finish. Now just enjoy a delicious soup!
