Cauliflower soup with crispy bacon

Autumn is time for soups! Cauliflower soup with bacon is always good.

  • 1 stort cauliflower
  • 5 dl half-fat milk
  • 5 dl chicken broth
  • 3 dl whipping cream
  • 8 skiver bacon
  • salt and pepper
  • a little good olive oil

I am very fond of soups and in the autumn there will be a lot of soups on the menu. Making a good cauliflower soup is easy and very good. Stay away from bag soups and make your own. Homemade is always the best and has far more nutrition than bagged food.

Step 1

Cut off the leaves of the cauliflower and divide into larger pieces. I also use the stalk of the cauliflower when I make soup.

Step 2

Measure out milk, chicken broth and cream and pour into the pan together with the cauliflower.

Step 3

Let cook for about 20 minutes until the cauliflower is tender. Run smoothly with a hand mixer and season with salt and pepper.

Step 4

I always fry bacon in the oven. It's easy and the result is great every single time. Spread the bacon on a baking tray with parchment paper. Put in the oven at 190 degrees and cook until properly cooked. This takes +/- 10 minutes. Drain on kitchen paper and cut into smaller pieces.

Step 5

Pour into a soup bowl and sprinkle with plenty of crispy bacon. Finish with a few drops of good olive oil and well with freshly ground black pepper. Good luck.
