Chicken breast with lots of good taste - Learn this clever trick!

Chicken is very good and some of what we eat most of in Norway. Learn this clever trick to turn your chicken breasts into delicious, round and tasty chicken pieces.

  • 1 pack SMAK jæren chicken breast
  • 2 tbsp butter
  • 2 cloves garlic
  • 1 handful fresh basil
  • 2 dl breading flour
  • 1 dl grated parmesan
  • 1 pcs egg
  • 2 tbsp wheat flour
  • salt and pepper
  • plastic wrap

With this method, you do not need any fancy equipment, but only a pan and a frying pan. Garlic, basil and butter are very good, but here you can try other flavors and herbs inside the chicken. The technique is the same and has been used by chefs in restaurants for years. By letting the chicken simmer, it becomes very juicy. When you also make a good crust, you get perfect chicken, if you ask me. I have also made a film that thoroughly shows the technique of this recipe. Use good quality chicken, then the end result will also be better.

Step 1

Start by taking the chicken out of the package and place on a bench. Cut a little down the middle of the breast without cutting through in this way you get to fold out the chicken breast. Place the breast in between 2 layers of plastic. I use freezer bags I cut up because they have a little thicker plastic. Place the chicken between the plastic. Now you should beat the chicken a little flatter. Use a saucepan, rolling pin or meat hammer and hammer fairly flat. Add butter, garlic, basil, salt and pepper. Now move the meat (with the skin side) down onto plastic wrap. Watch the movie for how I roll it up and tie the ends.

Step 2

Boil a pan of water and turn down the heat so it does not boil, just simmer. Add the chicken rolls and leave for 30 minutes.

Step 3

Now it's time to make the crust on top of the chicken. Here we use lots of good flavors to get a crust that tastes very good! Roll the chicken first in flour and then in eggs. Mix together breading flour, parmesan, salt, pepper and finely chopped basil.

Step 4

Finally, roll the chicken in this mixture. Now it is ready to fry the chicken. Put well with butter and olive oil in a frying pan and fry for a few minutes on a little over medium heat until they have a golden and nice color.

If you make this dish for many people, it is smart to put the fried chicken in a fireproof pan and keep warm in the oven.
