Juicy chicken breast stuffed with spice butter!

  • 70 gram spice butter (see recipe below)

Spice butter

  • 200 gram butter
  • 0,5 pcs lemon
  • 4 cloves garlic
  • 2 tbsp finely chopped tarragon
  • 2 tbsp finely chopped parsley
  • salt and pepper

  • 1 pcs mashed potatoes
  • 1 pcs carrot
  • 2 pcs broccoli

This one was incredibly popular in the 70's / 80's and really deserves some attention again. This is incredibly good! Juicy chicken breast stuffed and with spice butter and with a crispy outside. There is some disagreement about the background of this dish and who made it first, but in my eyes this is a Ukrainian dish! Here I will show you how.

Step 1

Start by making the spice butter. Use room temperature butter and mix in all the ingredients. Form about 70 grams of butter per chicken breast as a cylinder and put in the fridge for 30 minutes.

Step 2

Divide the chicken in half and cut so that it is double in size without cutting through. Place plastic wrap over and under the chicken breast and beat it so that it is even in thickness and slightly larger.

Remove the plastic on the top and season with salt and pepper. Place the cold cylinder with butter in the middle of the breast and pack. It is important to wrap the sides as well so that the butter cannot run out. Now wrap the whole chicken breast tightly like a cylinder and place in the freezer for 15 minutes.

Now we will bread the chicken to get the good crispy outside. Start by removing the plastic and first dip in flour. The result is best if all parts have been covered with flour. Then you dip the chicken in the egg mixture and finally in the bread crumbs. All this can be prepared well before dinner if you are going to have company.

Step 5

First, fry the chicken in plenty of oil for 2-3 minutes until it gets a golden crust and then put it in the oven at 175 degrees hot air. Now it should cook for 15 minutes.

For this I served mashed potatoes and boiled carrots. When you cut through the chicken, all the good spice butter flows out and becomes the sauce for the dish. This is incredibly good! Good luck.
