Chili crab - A dish full of tastes from Malaysia

It is very strong, but so good that you just have to keep eating!

  • 2 big crabs
  • 5 tbsp sweet chili sauce
  • 3 tbsp siracha chili sauce
  • 3 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 3 tbsp ketchup
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 6 clove garlic
  • 2 pcs shallot
  • 2 pcs red chili
  • 1 lump ginger
  • 1 tbsp neutral oil
  • fresh coriander when serving
  • 1 pcs fresh chili (garnish)

This is so incredibly good and an exciting way to cook crab. This dish is usually enjoyed with fried steambuns. It also works great with a little loaf or bread so you get the good sauce. This is a bit messy to eat so remember to bring napkins.

Step 1

I start by making the sauce first so it is ready for the crabs to be cleaned and divided. Find a pot and add a little neutral oil. Coarsely chopped garlic, shallots, chili and ginger and add in a blender with a little water. Run to a fairly even mass. Pour this into the hot pan and cook for a few minutes while stirring.

Step 2

Turn down the heat to medium and add the rest of the ingredients to the sauce. Mix well and taste the sauce with salt and possibly sugar if you want a little more sweetness. Now you have a delicious, strong and good sauce. Let the sauce cook for 5-10 minutes until it becomes a little thicker and sticky.

Step 3

Now I'm going to get the crab ready. I had bought pre-cooked, but if you have raw crabs you can watch this video to learn how to cook crabs.

Step 4

Remove the "lid" of the crab and remove the gills. Press down on the head until you hear a click and remove the head. Now divide the body into 4 equal parts and let the legs sit on. Beat with the back of a knife so you get a broken claw and a little on the legs. This add the crab meat into the good sauce and makes it easier to eat afterwards.

Step 5

Now put the crab in the spicy sauce and mix well so all the crab is covered with sauce. Cover with a lid and let steam for 5 minutes. Now you get to mix the delicious broth from the crab with the sauce and an incredibly good sauce is created.

Step 6

When you serve on the plate, I try to put it back in the shape the crab had. 4 parts and the shell on top. Pour over a little extra sauce and garnish with fresh chili and cilantro. This tastes absolutely fantastic and you can just look forward to a spicy and good dinner. Good luck.
