Chocolate Rice buns - Awakens childhood memories and gives me christmas spirit!
One of my favorite Christmas cakes from my childhood, and it still is!
Ingredients
- 15 dl Puffed rice
- 200 gram Hardened coconut fat
- 50 gram Butter
- 1 pcs Egg
- 2 dl Powderd sugar
- 0,5 tsp Flaky salt
- 200 gram Chocolate (64%)
- 40 pcs Muffinforms
My mom always made these rice buns, and I loved them. This recipe is pretty easy and perfect for your kids to join in on the baking. Puffed rice glued together by some tasty chocolate. It is impossible to eat without getting your fingers sticky, but that's a part of the joy!
Step 1
You start with placing the hardened coconut fat and butter in a saucepan and let it melt on medium heat. The combination of the butter and the coconut fat gives a better taste than if you only used one. I recommend you getting some really good butter and not margarine.
Step 2
Get a bowl and add the eggs. Get your powdered sugar and chocolate ready.
Step 3
When the butter and fat is done melting you add the chocolate and stir till it's an even batter. Then you add the salt.
Step 4
Whip the egg and powdered sugar evenly till it turns white.
Step 5
Then you combine the eggmix and the chocolate batter till it's evenly mixed. After that you pour the rice puffs over and mix them together.
Step 6
Use muffinforms and fill it up with one heaping tablespoon for each form.
Step 7
When they cool down the rice buns will turn semi-solid. Keep them in an airtight container so they stay good for weeks. Good luck!
