Coconut macaroons - My favorite christmas cake since I was a child
Coconut macaroons are easy to make, taste fantastic and evokes childhood memories.
Ingredients
- 250 gram coconut
- 250 gram sugar
- 5 pcs egg whites
- 1 tbsp wheat flour
I love the soft inside and crispy outside of these coconut macaroons. This is my mom's recipe and tastes exactly like I remember from my childhood. It's very easy to make coconut macaroons. Here is a step-by-step guide with pictures and video (the video is at the bottom of the recipe). They are almost better if you let them rest for a couple of days, so make them ahead of christmas day.
Step 1
Start with mixing the dried coconut mass, sugar and egg whites in a big pan.
Step 2
Cook the mixture at medium + heat while constantly stirring. This takes 5-10 minutes. You should have a sticky batter. Then add flour and mix till it's well incorporated. Now the coconut macaroon dough is ready. Here are some pictures before and after. It should be shiny because of the melted sugar.
Step 3
Get a baking tray and place parchment paper over it. For one macaroon, fill a heaping tablespoon. Leave some space in between each macaroon, they will melt a bit in the oven. Preheat the oven to 170 degrees.
Step 4
The time it takes to bake is always different from oven to oven, but it should take somewhere in between 15-20 minutes. Take them out when they are golden brown and let them cool down.
