I saw a food program from the USA where they were visiting a Diner whose signature dish was Chorizo burgers. I got water in my mouth and found out that I just have to find a good recipe for this and share it with you. These burgers are served with melted cheddar topped with crispy chorizo, chili coleslaw and good hamburger bread. You quickly become the hero of the barbecue with these burgers on the grill.
Step 1
Start by measuring all the spices except salt in a bowl and add vinegar and water. Mix well until you get a puree. Put in the fridge.
Step 2
Put the pork mince in the food processor and pour over the salt. Run until you get a sticky and nice forcemeat. Pour over the puree of spices and continue to mix for a few minutes until you have mixed everything well together.
Step 3
Shape burgers of 165 grams and place in a pan with baking paper. Finish by covering the pan with plastic and place the entire pan in the refrigerator until it is to be grilled or fried. I use a small burger press, but you can easily shape them with your hands as well. If you use your hands, remember to make them a little thinner in the middle. This makes them smoother when frying / grilling afterwards.
Step 4
Grill on direct heat first on high heat. Grill both sides of the burger.
Step 5
Move to indirect heat and add the cheese and crispy pieces of Chorizo. I think cheddar is very good on burgers. Leave on indirect heat while you heat the breads.
Step 6
Now all you have to do is put the burger together. It is important to grill the bread a little first because then the bread gets a nice crust and the dressing does not run down into the hamburger bread and it gives a good crust. Add on Chili Coleslaw - Perfect accessory for barbecue! and finish with the burger on top.
Now just enjoy a spicy and good burger!
