Fish fits very well on the grill! This simple method allows you to gather the whole dinner in one package.
- 1 kg cod loin
- 1 pcs fresh cabbage
- 1 pack sugar peas
- 1 pcs fennel
- 1 pcs cauliflower
- 1 bunt spring onion
- 1 handful fresh oregano
- 0,5 pcs lemon
- 3 tbsp butter
- 12 pcs small tomatoes
- a little good olive oil
- salt and pepper
- aluminum foil
The combination of cod, fresh cabbage and good vegetables is an excellent summer dinner. I love this easy method that allows you to cook the whole dinner in an aluminum package. The fish and vegetables are steamed in a small closed package. This gives an intense and good taste.
Start by finding aluminum foil and pull off about 1 meter. Fold the foil so that it doubles. There are types of foil that are thicker and intended for grilling, but you get the same result by folding it twice. Place the foil on the kitchen workbench.
Start by rinsing and placing several leaves of fresh cabbage in the middle of the foil.
Then add the cauliflower bouquets, sugar peas, tomatoes and spring onions.
Then add the fish and some fresh herbs. I think fresh oregano goes very well with this dish. You can also use dill or basil. Pour a few drops of olive oil over the fish and sprinkle with salt and pepper. Squeeze over a little lemon juice and grate a little lemon peel. Finish with a couple of tablespoons of butter in each packet.
When you pack this together, it is important that it gets good air around it so that the steam can move inside the package. Start with the ends of the package and roll up so the "package" gets a small handle on top.
Place the fish on a preheated grill. I first put the package 3-4 minutes over direct heat. Then move the packages to an indirect heat and put on the lid. Depending on the size of the fish, the whole process takes about 10 minutes. Check after 8-9 minutes. When the fish is shiny and fine and flakes nicely, it is ready.
Just pour the contents into the package directly onto a platter or plate and enjoy. If you want, it is very good with some boiled potatoes, but not necessary. Encourages everyone to grill more fish and with this method the result is good and no mess. Good luck.
