Cod with lemon sauce - This recipe is so good!

Ingredients

  • 600 gram Cod loin
  • 1 pcs lemon sauce (see recipe below)
  • 1 pcs potato and parsnip puree (see below)
  • 4 pcs carrots
  • 1 tbsp honey
  • 4 skiver cured ham
  • 0,2 pcs parsnips for chips

Lemon sauce

  • 2 pcs shallots
  • 1 tbsp butter for frying
  • 1 pcs lemon (peel and juice)
  • 2 dl Munkholm Radler with lemon
  • 100 gram butter
  • 2 dl cream
  • Season with salt.

Parsnips and mashed potatoes

  • 500 gram potatoes
  • 2 pcs parsnips
  • 6 tbsp butter
  • a bit of boiling water
  • salt

When it's season for cod, you should enjoy this good raw material as often as possible. Of course, the recipe works very well with cod even outside the cod season. The sour lemon sauce with parsnips and mashed potatoes is very good! The whole thing is topped with crispy parsnip chips, caramelized carrots and crispy bacon. You really should try this recipe. NEW NEW I use Munkholm lemons with lemon flavor both in the sauce and with the food. Perfect match.

Step 1

Start by peeling the potato and parsnip and cut into pieces. Boil them together in unsalted water until tender. Fry the bacon until crispy and place on baking paper so that extra fat drains off. This makes the bacon even crispier. Fry carrots in butter and a little honey. Make sure that the carrots still have some chewing resistance.

When the potatoes and parsnips are tender, I pour off most of the water and run with a blender together with butter. Season with salt. You can choose whether you want a completely smooth or slightly coarser puree.

I season the cod pieces well with salt and pepper. Put some olive oil on the baking tray and over the fish. Leave with salt and pepper for 10 minutes before placing one in a preheated oven at 180 degrees hot air. The fish needs 13-16 minutes depending on size and is ready when you flake nicely and are shiny and nice.

To make the delicious lemon sauce, fry shallots and grated lemon zest in a little butter. When the onion has softened, add Munkholm Radler with lemon and a little extra lemon juice. This was incredibly good! If you do not have Munkholm Radler, you can use extra lemon juice. Let the liquid boil down a bit before adding the butter and whipped cream. Stir to a smooth and fine sauce and taste.

I cut the cured ham into small pieces after it has cooled and to make parsnip chips, cut some thin slices and fry them in hot oil.

Step 6

Now you just have to prepare the plate and serve. Start by adding some parsnips and mashed potatoes to the plate. Add glazed carrots, cod, sauce and top with bacon and parsnip chips. For this dish I served Munkholm Radler with lemon and it was an incredibly good taste combination.
