Cowboy Breakfast - Spicy beans, eggs and sausages baked in the oven!

A spicy dish full of nourishment!

  • 100 gram chorizo sausage
  • 2 pcs Shallots
  • 1 pcs red chili
  • 1 cloves garlic
  • 1 can Heinz white beans
  • 1 dl Ketchup
  • 1 tsp dijon mustard
  • 1 tsp worchester sauce
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • 2 pcs egg
  • 50 gram cheese in cubes
  • salt and pepper
  • oil for frying
  • finely chopped parsley

This breakfast / lunch is perfect the day after a party, out in the woods over the fire or just because you want a delicious start to the day.

Step 1

Start by cutting the chorizo sausage into pieces and fry in a little oil until crispy. Here you can of course vary with other varieties of sausages or bacon.

Step 2

Finely chop the shallots, garlic and chili and pour into the pan together with the sausage pieces. Cook for a few minutes until the onion is shiny and soft.

Step 3

Pour in the beans, ketchup, Dijon mustard, worchester and spices and mix well. I like it quite so spicy, but you can take less cajenne pepper if you want a milder version. Mix well.

Step 4

Break the eggs and place on top of the dish. Add tomatoes and a few pieces of cheese. Put the whole frying pan in a preheated oven at 225 degrees.

Step 5

Bake for between 5-10 minutes until the egg has become a little firmer and the cheese has melted. Now the dish is ready. PS REMEMBER THAT THE HANDLE IS NOW VERY HOT. Take the pan out of the oven and sprinkle over some finely chopped parsley. Serve with toast and best enjoyed straight from the pan. This dish is also perfect to make out in nature as a lunch or breakfast right on the fire. Good luck.
