2 different dinners with the same stew!
Ingredients
- 800 gram minced meat
- 200 gram bacon
- 2 pcs onion
- 6 cloves garlic
- 2 cans beans in tomato sauce
- 1 can canned tomatoes
- 2 pcs sweet pepper
- 1 can canned corn
- 50 gram tomatopure
- 2,5 dl chicken broth
- 2 tsp brown sugar
- 2 tsp cummin
- 1 tsp chilipowder
- 1 tbsp worchestersauce
- salt and pepper
A nutritious and delicious dinner you make in a short time. This is super everyday food and when I make this I always make a double portion so the amount is up to 8 portions. You can adjust the number of portions in the recipe and the amount adapts. The first dinner is cowboy stew and the rest I make enchiladas which I fill with this delicious cowboy stew and gratinate in the oven. Cowboy stew can be served alone or with potatoes, rice or with a salad. It is also good to top with a fried egg when serving. Here I show how to make this dish.
Step 1
Find a large pot and cut up the bacon. Fry the bacon on medium heat until it has turned golden and begins to become crispy. Add the minced meat and cook until the minced meat has taken on color. Then I add onions and garlic. Cook until the onion has become shiny and soft.
Step 2
Add tomato puree, Worcestershire sauce and spices and cook for a few minutes. By frying tomato puree, the taste is better! Add the rest of the ingredients to the pan and mix well. Let the dish simmer for 15 minutes.
Step 3
Adjust the taste with salt, pepper and chili. Now you can enjoy a wonderful nutritious cowboy stew. Good luck.
TIPS TO SAVE TIME. Make a double portion and save half of the cowboy stew in an airtight container in the refrigerator. I use this as a filling in some delicious enchiladas with au gratin cheese. Recipe coming.
