Crab batter in pan - a simple appetizer that impresses guests.
I love crab! This is a fairly simple appetizer that is perfect when you have guests at home. It is an easy start to the meal and can be prepared well before guests arrive. It contains small crispy toast, tomato, crab mixture and topped with parmesan chips, some crab meat and dill.
Ingredients
- 2 pcs stuffed crab shells
- 4 pcs slices of white bread
- 2 pcs shallots
- 1 pcs egg yolk
- 1 dl neutral oil
- 2 tsp dijon mustard
- 2 pcs large tomatoes
- lemon
- fresh dill
- salt and pepper
Step 1
Start by cutting slices of white bread and stick out nice roundings with a pan. If you do not have the pan, you can cut up pieces, but do not bring the crust.
Step 2
Find a frying pan and fry the white bread with a little butter until crisp and golden. I often use this method as an easy way for several types of small starters.
Step 3
Find a bowl to make the crab batter itself. Add 1 egg yolk and dijon mustard and stir well with a whisk. Pour the oil in a thin stream while whisking. This is just like making a mayonnaise. When the mayonnaise has a thick smooth consistency, add a little lemon juice, shallots, finely chopped dill and stir well.
Step 4
Season with salt and pepper. Add the crab meat directly to the bowl, but save some of the white meat for garnish on top. Stir well. If it is a while until you are going to serve then take plastic wrap over the bowl to put in the fridge.
Step 5
Cut out 4 round slices of the tomato flesh. I use the pan to push them out because then they fit exactly with the other.
Making parmesan chips is incredibly easy. Find a baking tray and place on baking paper. Place the pans to be used on the baking tray and grate a little parmesan in each pan. Distribute evenly throughout the pan and place in an oven at 200 degrees. Follow along a bit, but this takes about 6 minutes. Then you have perfect little round parmesan chips.
Now all that remains is to put together the dish. Start with the crispy slice of white bread, add the tomato flesh, top up well with crab mixture and place the parmesan chips on top. Finally, add some of the white crab meat on top and garnish with a little dill. Serve with a good white wine. Good luck!
