Creamy chanterelle pasta with bacon - Simple and fantastically good!
Ingredients
- 500 gram chanterelles
- 1 pack bacon
- 2 tbsp butter
- 2 pcs shallots
- 4 cloves garlic
- 2 tsp chili flakes
- 1 tbsp white wine vinegar
- 4 dl whipped cream
- 1 tsp dijon mustard
- 2 tbsp finely chopped thyme
- 100 gram parmesan
- 400 gram fresh pasta
- salt and pepper
When autumn comes you can either pick or buy chanterelles. I think the taste of these is so good and here I have made a lovely pasta dish with a creamy sauce and some bacon. A combination that should make most foodies smile from ear to ear. This recipe also has a video showing how I make it. You can find the video further down in the recipe.
Step 1
I start by frying the bacon on a baking tray in the oven. I think this method is faster and gives better results. Spread the bacon on a baking tray with baking paper and bake for about 10 minutes at 200 degrees. Place on paper towels and you will get very crispy bacon. Start by finding a frying pan and a pot to cook the pasta. In the pan, I first fry chanterelles in a dry pan. Cook for a few minutes until the mushrooms lose some liquid and reduce slightly. Then I add butter, salt and pepper and fry for a couple more minutes. Now put all this into a bowl.
Step 2
In the same frying pan, I add a little more butter and fry finely chopped shallots and garlic for a couple of minutes. Add the white wine vinegar.
Step 3
I like to use fresh pasta for this dish, but of course you can also use dried.
Step 4
Cut the crispy bacon into smaller pieces. Mix together pasta with sauce and bacon. Transfer to a plate and dinner is ready. It is important to mix the sauce and the pasta. This is done so that the sauce sticks to the pasta and thus the food tastes much better. Here you can see a video of how I make this dish.
