Creme Brulee - A classic French dessert

A smart dessert you can make the day before serving.

  • 3 dl whipping cream
  • 3 dl h-milk
  • 2 pcs vanilla pod
  • 100 gram sugar
  • 5 pcs egg yolk

Topping

  • 8 tbsp brown sugar
  • 24 pcs raspberry
Ingredients

Creme brulee means burnt cream in Norwegian. A classic creme brulee should be characterized by a delicious smooth and good cream pudding with a taste of fresh vanilla. It should be just right "dissing" and just before serving, sprinkle with a little brown sugar which is caramelized like a lid on top of the dessert. This is a fairly easy dessert to make and the big advantage is that if you are going to have guests you can make everything ready the day before and just make the lid right before serving. I think it's good with some fresh berries on top. So my version is with fresh raspberries.

Step 1

Start by pouring milk, cream and sugar into a saucepan. Divide the vanilla sticks into 2 and scrape out the seeds. Put both the seeds and the stick in the milk mixture. Heat to just below boiling point.

Step 2

Find a deep baking pan and put the bowls you are going to serve the dish in these pans. Set the oven to 150 degrees hot air.

Step 3

Put the egg yolks in a bowl and whisk together. Strain the milk mixture and pour the hot milk mixture together with the egg yolks while stirring constantly. When all the hot milk is in the bowl together with the egg yolks, pour everything back into the pan. Now turn on medium + heat and stir constantly with a spatula while heating the liquid up to 84 degrees. This makes the sauce thicken a little and you get a perfect consistency.

Step 4

Distribute the vanilla sauce in the bowls and put the whole pan in the oven. Boil water and fill the pan so that it covers a little over the middle of the bowls. This is called frying in a water bath. PS. Pour a little carefully so that there is no water in the small bowls. Now leave in the oven for about 30 minutes at 150 degrees.

Step 5

Take the bowls out of the water bath and allow to cool slightly on the bench before placing them in the refrigerator. I cover with plastic wrap on each bowl. Leave in the fridge for a minimum of 4 hours. These work great to leave in the fridge overnight as well. Take them out about 1 hour before serving. Just before serving, sprinkle on a little brown sugar, burn off with a gas burner so you get a nice crust on top. If you do not have a gas burner, you can also use the grill element in the oven.

Step 6

Add a few raspberries and serve immediately! Good luck.
