Gladkokken's spicy chicken wings - the baking powder trick!

This trick gives perfect crispy chicken wings embraced in a delicious spicy dressing!

Chicken wings

  • 2 pakker Smak Jæren Chicken wings
  • 1 handful parsley
  • 1 tbsp sesame seeds
  • 2 tbsp finely chopped chives

Spice mixture

  • 4 tbsp baking powder
  • 2 tbsp salt
  • 1 tbsp white pepper
  • 1 tbsp cummin
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder

Honey and Siracha glaze

  • 4 tbsp akasi honey
  • 1 tbsp Siracha
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic
  • 1 klump ginger

When you cook chicken wings properly, this is really snack food! These crispy chicken wings are hard to stop eating. Good quality chicken wings, a spicy crispy skin and a happy one that is both strong and sweet. To me, chicken wings can not be better than this. The trick to using baking powder gives you an extremely crispy crust. There is some chemical reaction going on, but the result is amazing! Do not worry that it will taste like baking soda because you can not feel it when the wings are done.

Step 1

Start by mixing the spices and baking powder. Stir well so there are no lumps.

Step 2

Put the chicken wings in a large bowl and sprinkle over 1/3 of the spice mixture ... Shake the chicken wings well and pour in another 1/3 part ... shake the bowl once more before adding the rest of the spices. This is so that there will be an even and nice breading of the chicken wings. If there is any spice left, just throw it away.

Step 3

Light the grill and create an indirect zone on the grill. The chicken wings should not be grilled over direct heat. Put on the chicken wing and put on the lid. Let grill for about 15 minutes before turning them. Turn the chicken wings every 15 minutes and grill them for a total of 1 hour. The cooking time can vary depending on the temperature of your grill. They are ready when the skin on the chicken wings is completely crispy and it is at least 70 degrees core temperature.

Step 4

Pour in honey, chili sauce and the other ingredients in a bowl and stir well. I strain the sauce just before serving so I do not get the pieces of garlic and ginger.

Step 5

Put the hot chicken wings back in the bowl and pour on the marinade. Shake well and stir so that all the chicken wings are covered with the delicious glaze. Finish by sprinkling with sesame seeds, finely chopped parsley and finely chopped chives.
