Entrecôte Café de Paris - Perfect steak with french fries and lovely sauce

Ingredients
- 4 pcs Entrecôte
- 4 porsjoner French fries
- 1 pcs Café de Paris sauce
When I get a perfect steak with crispy fries and a lovely sauce I'm in heaven. Enjoyed with a good red wine and friends. This is French bistro at its best. Get good ingredients in perfect harmony. This dish makes me happy!
Step 1
This dish really only has 3 elements and therefore I do my very best to ensure that all 3 are as good as possible. I buy good quality meat and season plenty of salt and pepper before it is fried / grilled. Pay attention to the temperature when making entrecôte. I use high heat first to give a nice crust before I turn down the heat and let the core temperature get up to 56 degrees. It is also important to let the meat rest for 10 minutes.

Step 3
Making french fries can be done in several ways! I really like the method where it is boiled gently first before it is fried twice afterwards. First at 160 degrees and then at 190 degrees. Step 4
Now all you have to do is cut the meat into slices and place on a plate together with crispy french fries. Finish by pouring over some of the good entrecôte sauce. Below you can see a video of this dish.
