French Fries - That's how they become perfect!

My opinion is that a perfect French fries should be completely crispy on the outside and the inside should be delicious to soft.

French fries taste incredibly good when made properly. Unfortunately, an incredible amount of bad French fries are served all around. This is not a method I have invented myself, but I have tried the method many times and the result is absolutely perfect. It is the world-famous chef Heston Blumenthal who showed this in his series: "In search for perfection". The beauty of this method is that you can do all the steps in the recipe without the last one finished long before the guests arrive and it is only the last frying just before serving.


Step 1

Start by cutting the potatoes into neat strips. It is important that they have some thickness. I make them at about 0.5- 0.8 cm. It's just funny that they have a slightly different length, but it pays off that the thickness is quite similar.

Put the pre-cut potatoes in a large saucepan and put it under cold water in the sink. Leave it in cold water for 10 minutes. This allows you to get a lot of the starch away from the potatoes.

Pour off the cold water and pour in new water with a little salt. The potatoes should be heated and simmered for about 15 minutes until they are quite tender. Carefully pour off the water and place the chips on a large baking tray.

Let them evaporate and feel free to put the baking tray in the fridge or freezer. There is drier air and some of the goal is to get moisture out of the potatoes.

Find a large pan or fryer and pour in oil. Heat the oil to 160 degrees.

Fry several times so you have full control. Do not add too much oil as it may overflow. It bubbles a lot when you put in the potatoes. Fry for 5 minutes at 160 degrees and put them back in the baking pan. When you have finished frying all the potatoes once, put the pan back in the fridge / freezer for a minimum of 10 minutes.

Just before serving, turn up the heat so that the oil reaches a temperature of 190 degrees. Now they should be fried for about 3 minutes until they have a completely golden color and are completely crispy. Place on a grate or baking paper so the fat gets clean. Place in a bowl and sprinkle with a little salt, pepper and finely chopped parsley. Serve steaming hot!

This method ensures you perfect French Fries. You can enable steps 1-3 the day before or early in the day. Then you only have step 4 left before you can serve! A little work, but if you want the best result, this is the best method. Good luck.
