Fish and shellfish soup with coconut milk!

This is a delicious and tasty fish soup. Warming chili and mild coconut milk combined with salmon, shrimp, mussels and cod. Very good taste combinations and a warming and delicious creamy broth. This soup tastes good all year round.

  • 1 nett mussels
  • 800 gram shrimps
  • 400 gram salmon
  • 600 gram cod loin
  • 2 pcs red chili
  • 2 pcs shallots
  • 2 cloves garlic
  • 2 tbsp tomato puree
  • 2 tsp sugar
  • 2 dl white wine
  • 2 bokser coconut milk
  • 50 gram butter
  • 1 liter shellfish broth
  • 1 pcs lemon
  • fresh coriander
  • salt and pepper

Shellfish broth on shrimps

  • shrimp shell
  • 1 tsp whole pepper
  • 1 pcs onion
  • 3 cloves garlic
  • 1,2 liter cold water

Step 1

Start by rinsing and washing the mussels well. Discard those that are damaged or do not close when they are above the water. Find a large pan and add the butter. Finely chop shallots, chili with seeds and garlic. Simmer in the butter for 5 minutes on medium heat. Add tomato paste and sugar and cook for another 2-3 minutes. Turn up the heat, add the mussels and stir well in the pan. Add the white wine and put on the lid. Now it takes about 5 minutes before the mussels are done.

After about 5 minutes, all the mussels have opened and are done. It is important that the white wine boils / steams the mussels properly. So if the heat is not high enough it may take a little longer. Fish up all the mussels and place in a bowl until later. Add both cans of coconut milk and simmer for 10 minutes. Pour in the shellfish broth (See recipe for shellfish broth at the bottom of this article). Continue cooking for about 20 minutes. Season with lemon juice, salt and pepper to get a good balance on the soup. Run smoothly with a hand mixer.

Peel the shrimps and cut the fish into suitable large pieces. I usually take the fish sous vide separately at 55 degrees for 20 minutes, otherwise you add the fish to the hot soup 5-10 minutes before serving.

Start by placing some mussels in the bottom of each plate or back in the pan. Add the fish and finish by garnishing with shrimp and a little coriander. Now you can enjoy a delicious and good fish soup!

How to make shellfish broth on shrimps: Take a saucepan and set on high heat. Add neutral oil and heat. Add all the shrimp shells and stir well. Fry the shells for a few minutes before adding the onion, garlic and a little pepper. Bake for a few more minutes and pour in about 1 liter of water. Let boil for about 30 minutes and strain off the broth.
