Asian vegetable soup - Perfect for reducing food waste and using leftovers!
This good broth goes with most vegetables!
Ingredients
Soup broth
- 1 liter chicken broth
- 5 dl coconut milk
- 1 tbsp fishsauce
- 1 tbsp Siracha chilisauce
- 1 tbsp sugar
- 1 tbsp soy
- 1 tbsp rice vinegar
- salt and lemon juice
Suggestions for vegetables
- 4 pcs carrot
- 3 pcs shallots
- 1 pcs parsley root
- 2 pcs red chili
- 3 pcs celery sticks
- 3 pcs tomatoes
- 1 cloves garlic
This soup is incredibly good and easy to make. Mix the broth together and cut up the vegetables you have available. A super everyday dinner full of vitamins and nutrition.
Step 1
Start by finding the vegetables you have available and cut them into pieces. Put the vegetables in a saucepan.
Step 2
Mix together the broth of the soup and pour over the vegetables.
Step 3
Let the soup cook for 20 minutes and run smoothly with a hand mixer. Season with salt and a little lemon / lime juice. Decorate with a little extra herbs and chili powder.
