Fish burger of cod with "quick remoulade" - Easy way to make a burger from the fish!

Making burgers or fish cakes from fish is easier than you think!

Ingredients

  • 800 gram fresh cod
  • 3 tsp salt
  • 1 pcs egg
  • 2 tbsp potato flour
  • 2 dl whipping cream
  • lots of freshly ground pepper
  • butter for frying

Quick remoulade

  • 2 dl real mayonnaise / homemade aioli
  • 2 tbsp capers
  • 2 pcs pickles
  • 1 handful finely chopped parsley
  • a little lemon juice
  • salt and pepper

Accessories

  • 6 pcs hamburger bread
  • 2 pcs salad
  • chilisauce (siracha)

Step 1

In order for us to eat enough fish at home, it is sometimes smart to "shape" the fish into something else. Fish burgers are very popular for the younger ones and when you make them yourself you know exactly what they contain. In this recipe I have used cod which gives nice and light fish burgers. Along with a quick remoulade, salad, some chili sauce and hamburger bread, you have a quick, easy and very good dinner.

When you make burgers or fish cakes, the result is always best when you use fresh fish. This time I bought fresh cod. Cod has a mild and good taste. It is also important that all the ingredients for the fish burger are cold to get a nice stuffing. Start by cutting the fish into pieces.

Put the fish together with salt in the food processor and cook for a few seconds until you get a sticky mass.

Add the potato flour and eggs. Mix for a few more seconds.

Add plenty of freshly ground pepper to the cream and make sure the cream is cold when you spread the mince. Let the machine run while you pour the cold cream in a thin stream. After a very short time you get a great forcemeat.

Shape the fish mince into burgers. I think it's nice that the burger is a little bigger than the hamburger bread you plan to serve them in, but of course it's not necessary.

Find a frying pan and add butter. Fry the burgers on a fairly high heat. I wait to put in the burger until the butter has a brown and golden color. It is best when the fish gets a good crust. Bake for a few minutes on both sides and the burger is ready. If you are not going to eat it right away, keep it in the fridge. Then you can heat them a little in the oven before serving.

Step 8

Mix together all the ingredients for the remoulade and stir well. Season with lemon juice, salt and pepper. Leave in the fridge until serving.

It is a good tip to fry the hamburger breads a little so you get a crust on the side you are going to have against the burger. This tastes good and also means that the dressing does not make the bread soft. Place hamburger bread on a plate. Top with some fresh salad, remoulade, fish burger and chili sauce before putting on the hamburger lid to serve! Good luck.
