Fish`n Chips - Recipe from Gladkokken's food course
Perfect crispy fish and french fries!
Ingredients
Fish and tempura stir
- 1 000 gram fresh cod
- 100 gram wheat flour
- 100 gram cornstarch
- 3 tsp baking powder
- 4 dl dark beer
- salt and pepper
- Flour to roll the fish in.
Tartar sauce
- 1 pcs egg yolk
- 2 tsp dijon mustard
- 3 dl sunflower oil
- 1 tbsp brine from pickle
- 2 tbsp pickle
- 2 tbsp capers
- 2 tbsp finely chopped tarragon
- 1 tbsp finely chopped parsley
- a little lemon juice
- salt and pepper
French fries
- 1 kg potatoes
- 2 liter frying oil
- salt and pepper
Pea purée
- 1 bag frozen green peas
- 100 gram butter
- some of the boiling water
- salt and pepper

Step 2
Cut the fish into even pieces and sprinkle with a little salt. Dip the fish in flour and dip in a frying pan before frying. Fry for 3-4 minutes until golden and fine.
Step 3
