Fish`n Chips - Recipe from Gladkokken's food course

Perfect crispy fish and french fries!

Ingredients

Portions

Fish and tempura stir

  • 1 000 gram fresh cod
  • 100 gram wheat flour
  • 100 gram cornstarch
  • 3 tsp baking powder
  • 4 dl dark beer
  • salt and pepper
  • Flour to roll the fish in.

Tartar sauce

  • 1 pcs egg yolk
  • 2 tsp dijon mustard
  • 3 dl sunflower oil
  • 1 tbsp brine from pickle
  • 2 tbsp pickle
  • 2 tbsp capers
  • 2 tbsp finely chopped tarragon
  • 1 tbsp finely chopped parsley
  • a little lemon juice
  • salt and pepper

French fries

  • 1 kg potatoes
  • 2 liter frying oil
  • salt and pepper

Pea purée

  • 1 bag frozen green peas
  • 100 gram butter
  • some of the boiling water
  • salt and pepper

Step 1

Step 2

Cut the fish into even pieces and sprinkle with a little salt. Dip the fish in flour and dip in a frying pan before frying. Fry for 3-4 minutes until golden and fine.

Step 3

You make tartar sauce like an aioli or mayonnaise and mix in the other ingredients. Here is a link to how to make aioli in a few minutes. Aioli
