Homemade fish gratin - Well liked by young and old

Fish gratin is very good. This is a great way to eat fish and with a little love and good ingredients, this will also be a feast. A fish gratin should not be boring, but an exciting pan with fresh fish and delicious flavors. When you make this dish yourself, that's exactly what you get.   • 10 pcs almond potatoes
  • 750 gram fresh cod (mix lightly salted and plain)
  • 1 pcs leek
  • 3 pcs egg
  • 8 dl whole milk
  • 3 tbsp butter
  • 3 tbsp wheat flour
  • 2 pcs shallots
  • 2 cloves garlic
  • 50 gram parmesan
  • 2 tsp dijon mustard
  • 0,5 pcs lemon (juice only)
  • 1 tsp nutmeg
  • breading flour / bread crumbs
  • salt and pepper
  • good olive oil

Step 1

Start by cutting the almond potatoes into small cubes. Boil a pan of salted water and add the potatoes. Cut the stalk of a leek into small pieces and add together with the potatoes for the last 2-3 minutes. Boil the potatoes for about 8 minutes.

Step 2

Find a pan and add the milk together with the nutmeg and 1 bay leaf. Heat to just below boiling point. Add the fish and let it soak for 5 minutes. I let the salted fish soak in a pan of water at the same time. Take out the fish and save the milk for the sauce.

Find a saucepan and add the butter and finely chopped shallots and garlic. Let the onion simmer in the butter for a few minutes before adding the flour.

Stir well and add the warm milk in a thin stream. Make sure you do not have too much heat as the milk may burn. Once you have added the milk, let it simmer for 5 minutes. Grate the parmesan and add almost everything. Save a little to have on top of the gratin at the end. Add the mustard and half a lemon juice. Season with salt and pepper.

Separate the eggs so you have egg whites in one glass and the egg yolks in another. Turn off the heat on the sauce and stir one egg yolk at a time into the sauce. Whip the egg whites and turn in carefully. This gives the sauce an airy and nice consistency.

Put fish, potatoes and leeks in a casserole dish and pour over the sauce.

Mix gently and pour well with breading flour or breadcrumbs. Put the rest of the parmesan on top. Finish by pouring on some good olive oil on top.

Preheat the oven to 200 degrees and bake for 35 minutes.
