Croque Monsieur + madame - French gourmet cheese sandwich

Croq Monsieur/madame

  • 4 skiver good country bread
  • 4 skiver good ham
  • 2 tbsp butter (to fry bread)
  • 2 tsp dijon mustard
  • 4 skiver ridder cheese
  • 50 gram grated gruyere cheese
  • Bechamel sauce (see recipe below)

Bechamel / cheese sauce

  • 2 tbsp butter
  • 2 tbsp wheat flour
  • 3 dl milk
  • 1 tsp dijon mustard
  • 30 gram grated parmesan
  • 0,5 tsp grated nutmeg
  • salt and pepper
Ingredients

This is one of France's national treasures. A cheese sandwich made with love and good flavors. The secret lies in the bèchamel sauce, type of cheese, ham and crispy delicious toast. It takes a little longer than making a regular cheese sandwich, but then you also get a result that surpasses all other cheese sandwiches. If you put a fried egg on top, you finally get the classic Croque Madame. Try both and see which one becomes your new favorite. I have made a video how to make these delights.

Step 1

Start by cutting two good slices of the country bread and fry in a frying pan with butter. No margarine or other "cheat" butter is allowed here. Cook until golden and crispy on one side and take them out of the pan. Spread well with Dijon mustard on the side where the bread is not baked and sprinkle on a little Cayenne pepper.

Step 2

Now it's time to make the Bèchamel sauce. It is made like a regular white sauce. Take a small saucepan and add 2 tablespoons of butter. When the butter has melted, add 2 tablespoons of flour. Stir well and dilute with milk. Season with ground nutmeg, salt and pepper. Watch the temperature! There is nothing good with burnt sauce.

Step 3

Now spread well with dijon mustard on each slice of bread. Add ridder cheese, ham and cheese sauce. Top with a little extra grated cheese.

Place the last slice of bread on top. Since you have fried in butter, this should be on top. Pour plenty of sauce on top of the sandwich and sprinkle on the rest of the cheese.

Step 5

Put in a preheated oven at 200 degrees and bake until they start to get a nice cheese crust on top and that everything is good and melted inside the cheese sandwich. This takes about 10 minutes.

Serve with a sour salad and place some Dijon mustard next to it. When it comes to cheese sandwiches, there is no better.
