Fresh meat and onion sauce - Norwegian traditional food that warms in the cold
This dish is often served with soup first, but I think the main course is so good that I will not eat anything else until I start this. There is something very special about the sour-sweet onion sauce and the tender meat. I make this dish very simple and serve only with potatoes and a little parsley. I was served this dish many times in my childhood and it is probably some of the nostalgic feeling of this dish that I really appreciate. The dish is very simple, but the taste is distinctive and special. It is important to take care of the Norwegian traditional dishes and for me this is one of them.
Ingredients
Recipe the broth of cooking the meat
- 1 liter cold water
- 1 kg high ribs of beef
- 1 tbsp whole black pepper
- 3 cloves garlic
- 2 pcs bay leaves
- 2 pcs carrot
- 1 pcs onion
Recipe onion sauce
- 6 dl reduced broth
- 1 pcs onion
- 2 tbsp butter
- 2 tbsp wheat flour
- 2 dl whipping cream
- 2 tbsp vinegar 7%
- 2 tbsp sugar
- salt and pepper
- curled parsley
Potatoes
- calculate 2-3 potatoes per person
Step 1
Start by rinsing the meat in water and find a large pan. Fill the pan with cold water and add 1 onion, whole pepper, garlic, chili, bay leaf, and 2 carrots in pieces.
Step 2
Cut off large tendons on the meat, but leave the fat behind. Divide the meat into a few large portions. You should cut it up before serving. Add the meat and turn on the heat.
Step 3
When the water starts to boil, take off the foam that comes on top and turn down the heat so that it only simmers (simmers = a small bubble occasionally). Now let it stand on this heat for 2 1/2 to 3 hours. The meat should be very tender. Strain the broth and place the meat on a plate.
Step 4
Boil down the broth until you have about 5-6 dl left. This gives a more concentrated and better meat taste to the sauce.
Step 5
Find a new pan and add 2 good tablespoons of butter. Finely chop 1 onion and add in the melted butter. Let simmer for a few minutes so the onion is soft.
Step 6
Add the flour and stir well. Dilute with the hot broth and cook for a few minutes, add 2 dl cream, vinegar and sugar. Season with salt and pepper. If you want the sauce sweeter, add a little more sugar and vice versa if you want the sauce more sour. Boil some potatoes. Place the boiled potatoes on the plate, pour over well with sauce and place on slices with the boiled beef on top.
Garnish with finely chopped parsley and serve piping hot. This is Norwegian home cooking at its best! Good luck.
