This beef stew with a delicious au gratin mashed potato lid is a wonderful dinner. The dish makes almost itself, but it takes time. It is because of the long cooking time that you get the incredibly tender meat, the delicious taste and it smells delicious in the house throughout the day. Sit back in your chair, take a cold Guinness and be prepared and enjoy this meal. This dish is made with either lamb or beef. I think the best result is to make with high ribs of beef and Guinness as the broth for the sauce.
Step 1
Start by cleaning the meat of slivers and tendons. Do not cut away the fat, it gives a very good taste in the pan. Find a frying pan and a large pan. Cut the meat into suitable pieces and roll them around on a plate with flour and salt. This gives a better crust, taste and acts as a thickener to the sauce. Fry the meat on very high heat in oil in the pan and put straight into the pan when it has a crust. Put some butter in the pan and add the finely chopped onion and shallots. Simmer until the onion has softened before adding the beer.
Step 2
Pour into both boxes of Guinness and wait until it boils. When it boils, lower the temperature to medium heat. So there are just a few small bubbles every now and then. Add star anise, bay leaves and worcheister sauce. Let simmer in the pan for about 3 hours. Then the liquid is reduced and the meat is so tender that it almost falls apart. Remove star anise and bay leaves and pour the pan into a fireproof baking pan.
Step 3
Now you need to make mashed potatoes. I peel the potatoes and divide them into smaller pieces. I never use salt in the water when I make mashed potatoes, then the mashed potatoes are easy to get a little chewy. Cook until the potatoes are completely tender and pour off the water. I like to use a potato press, but if you do not have it crush the potatoes together well with butter and a little milk. It is important that you do not take too much liquid in the mashed potatoes as it will act as a lid on Shepard's Pie.
Step 4
When you have finished mashed potatoes, season with salt and pepper. It is important that there is enough salt in the mashed potatoes if it does not taste a little dull. Gently spread the mashed potatoes all over the pan so that it becomes like a lid.
Step 5
Finally, I think it is very good to sprinkle some grated cheese on the potato lid before putting it in the oven. I like to use Parmesan cheese, but here you can also use other milder cheese. Sprinkle on cheese.
Step 6
Bake in hot air at 225 degrees for about 10 minutes. Then you get a golden nice crust and the sauce bubbles a little through the lid in some places. Let the dish rest for 5-10 minutes before serving. Sit down, open a good beer and enjoy a fantastic meal! Good luck.
