Goulash - warming, spicy and full of nutrition

Goulash is one of Hungary's national dishes. This dish takes time to make, but the work is small. The result is a fantastic stew with a tasty tomato sauce, tender pieces of beef, delicious chorizo, smoked peppers and vegetables. The dish is a soup and is most easily eaten with a spoon. On a slightly cool autumn or winter day, there is not much that tastes better than a good warming portion of Goulash. With dishes like Gulasj, there are countless recipes. This is very true to the original flavors and I show you the tricks for the result to be absolutely perfect!

  • 600 gram high ribs
  • 200 gram chorizo
  • 1 pcs onion
  • 1 pcs red paprika
  • 3 cloves garlic
  • 1 pcs carrot
  • 1 pcs red chili
  • 4 pcs potatoes
  • 2 tbsp tomato puree
  • 1 can canned tomatoes
  • 1 liter beef broth
  • 3 tbsp smoked paprika
  • 1 tbsp caraway
  • 1 tbsp sugar
  • 2 pcs bay leaf
  • fresh parsley
  • salt and pepper

Step 1

Start by finding a large pan. I start by pouring some neutral oil into the pan. Finely chop onion, chili and garlic and place in the pan.

Let simmer on medium heat until the onion has become soft and shiny. Then add tomato paste, smoked paprika, sugar and caraway. Bake for a few minutes before pouring in the canned tomatoes. Top up with the beef broth and cook for 1-2 minutes.

Use a hand mixer and run this mixture smoothly. This gives more fullness to the sauce and gives a better result. Put this mixture on medium heat so that it only simmers.

Find a frying pan and set on high heat. Finely chop the chorizo sausage and cook on high heat until it gets a little crust.

Pour all this into the sauce and be careful to bring the delicious oil into the frying pan. Cut the high ribs into nice small pieces. Season with salt and pepper and fry on high heat in the same pan. When the meat has a nice crust, you also pour this into the sauce. Fry the meat in several rounds so it is not cooked.

When you have fried and added all the meat to the sauce / broth, add the bay leaves and diced peppers. This should now be simmered for 2-4 hours.

Cut boiled potatoes and carrots into small cubes. Remember to eat this dish with a spoon, so the pieces can not be too large.

Step 8

40 minutes before serving this dish, add the potato and carrot pieces. Let them simmer with the rest of the dish for the last time. Taste the stew with salt, pepper and possibly with paprika and chili.

Sprinkle with a little finely chopped parsley just before serving. It is also good to serve this dish with some good bread. Some people like to have a little sour cream in the dish. Now just enjoy this wonderful Hungarian dish. Good luck.
