  • 3 pcs carrot
  • 1 pcs parsley root
  • 1 pcs celery root
  • 3 cloves garlic
  • 2 pcs shallots
  • 2 pcs bay leaf
  • 1 bunt parsley leaves

Make a large portion for this it goes a lot. You can easily freeze the leftovers and thaw them again at a later time. This soup almost makes itself, but it takes a long time. I usually cook the meat and make the broth the day before I serve. Then just heat up, add the vegetables and the soup is ready in 30 minutes. This is a great way to use cheap and healthy ingredients to make something that both young and old love. Here I will explain to you how to make this soup. I make a double portion so I have for a later occasion, but the recipe is for a pan of soup for 4 portions.

Step 1

Start by finding a large pan and place the pork bone in the pan. Fill with water so it covers all the meat and a little more. Add whole black pepper, garlic, shallots and bay leaves. Boil the water. When the water boils, turn down the heat so it only simmers. This should be left to cook for about 2 1/2 hours before the broth and the pork bone are done. It will be a wonderful taste of this broth.

Take up the pork bone and clean off all the fat. You should only use the meat on the bone. Cut the meat into suitable pieces and set aside on a plate. Strain the broth so leaves, peppercorns, etc. are gone. When the meat cooks, I cut the vegetables and potatoes into suitably large cubes. Add all the vegetables to the broth and cook until tender. This takes about 15 minutes. When the vegetables have cooked, add the meat and cook everything on medium heat for 10 minutes.
