Gladkokkens Shrovetide buns - juicy buns filled with vanilla cream and raspberries

Ingredients

  • 800 gram wheat flour
  • 120 gram sugar
  • 4 dl milk
  • 1 pack dry yeast
  • 150 gram butter
  • 1 tsp salt
  • 2 tsp cardamom
  • 1 pcs eggs (for the batter)
  • 1 pcs eggs (for brushing)
  • 3 dl whipping cream
  • 3 dl homemade vanilla cream
  • icing sugar
  • fresh raspberries
Ingredients

Shrovetide buns have been a tradition for many years. Delicious airy buns filled with cream and berries. I have a very good recipe for buns and when these are filled with homemade vanilla cream and raspberries, this becomes a bit of a gourmet variant of these buns. If you try these, it will be difficult to go back to normal again.

Step 1

Start by pouring all the dry ingredients of the dough into the mixing bowl. Stir well.

Step 2

Heat milk to 20-25 degrees room temperature and beat in eggs. Pour this liquid over the dry and screw on the food processor with a kneading hook. Leave to knead for 10 minutes until you have a smooth and fine dough that releases the edge of the bowl.

Step 3

Add butter in cubes little by little and let the dough "eat" up these. Leave to knead for another 10 minutes. If necessary, adjust with a little more flour, but be patient and let the machine work first.

Step 4

Now the bun dough must rise for a minimum of 1 hour to double size.

Step 5

Divide the dough into 18 equal parts and roll into buns. Leave to rise for about another 45 minutes until the buns have become large and fluffy. Brush with beaten egg and bake on top and under heat 225 degrees for 11-12 minutes.

Step 6

When the buns are done, move them onto a rack and let them cool down.

In these buns I use a combination of whipped cream and homemade vanilla cream. I use equal parts whipped cream and vanilla cream. Here is my recipe for homemade vanilla cream and it is very good. Homemade vanilla cream - one of the most widely used dessert sauces.

Step 8

When the bowls have rested, I cut them nicely in the middle. Top with vanilla cream and fresh raspberries. Put the lid on and sprinkle with a little icing sugar and alternatively raspberry dust.
