Gratinated crab shells with delicious sauce and crispy bread - YES THANK YOU
Now it's crab season and crab works very well on anything other than bread with mayonnaise. This recipe tastes fantastic, looks delicate and is very easy to make.
Ingredients
- 4 pcs cleaned crab shells
- 2 pcs shallots
- 150 gram butter
- 1 pcs lemon
- 1 dl white wine
- 1 pcs red chili
- 1 pcs spring onion
- finely grated parmesan
- salt and pepper
You get a juicy delicious hot crab with this sauce and a small peel of au gratin parmesan. Perfect as an appetizer or for a good lunch on the weekend with a glass of good white wine. Buy good fresh crab shells!
Step 1
Start by checking the scale for shells and mix well, and make the crab meat a little more airy so the sauce can flow well afterwards. Find a frying pan and set on medium heat.
Step 2
Finely chop the shallots and put a blob of butter in the pan. Cut the rest of the butter into small cubes and place on a plate in the fridge. To make this sauce, you need butter in cubes that are cold. When the onion has fried in the butter for a few minutes, add the white wine. Let the wine reduce (boil away) until there is almost nothing left.
Step 3
Then turn off the heat on the pan and pull it aside. Whisk in the cubes with butter for several rounds, add butter and when it is gone, add a little more butter. Then you get a smooth and nice sauce.
Step 4
Finely grate the peel of a lemon and add to the sauce together with some spring onions and finely chopped chili without seeds. Save some spring onions and chili for garnish.
Step 5
Divide good bread and fry in a pan with a little butter, salt and pepper until crispy. Pour the sauce over the crab shells and stir gently. Top well with finely grated parmesan and place in an oven at 200 degrees.
Step 6
After 5 minutes, turn on the grill and fry the cheese to get a golden and nice color.
Step 7
Serve on a plate with a slice of lemon and the hot crispy bread. Then you get all the good juices and sauce.
