Gremolata - Italian herbal mix - Perfect for lamb and veal

The smell of Gremolata fills the kitchen with joy!


  • 1 bunt parsley leaves
  • 4 cloves garlic
  • 2 pcs lemon (peel only)

This traditional mix of parsley, garlic and lemon peel is incredibly good for lamb, veal and several types of meat. It takes 5 minutes to make, but elevates the taste of the dish with many notches. This is the standard accompaniment to the classic Italian dish Ossobuco, but I like to use this on several dishes. Delicious combination of acid, garlic and parsley. This not only satisfies the senses of taste, but smells very good and decorates the dish.

Step 1

Not much explanation is needed here. Find a clean cutting board and finely chopped parsley and garlic. Peel a squash, grate it and squeeze the juice. Mix well and pour into a glass. Take over plastic wrap until serving.
