Grill Hollandaise - A heavenly experience.

It is not healthy and it requires some technique to make it happen, but if you can do it, you have a heavenly experience ahead of you.

  • 2 pcs egg yolks
  • 1 tbsp dijon mustard
  • 1 tbsp Siracha chilisauce
  • 1 tbsp apple cider vinegar
  • 0,5 pcs lemon
  • 200 gram browned butter
  • 3 pcs spring onion
  • salt and pepper

This is like a bearnaise or hollandaise, but it is made on browned butter. The taste of chili, mustard and apple cider vinegar makes this a unique sauce. This is a really MUST TRY recipe.

Step 1

Start by melting the butter in a saucepan while stirring. You should get a nutty brown butter without it burning.

Put egg yolks, Dijon mustard, vinegar and chili in a bowl and whisk well together.

Step 3

Allow the browned butter to cool slightly and add to the egg mixture in a thin stream while whisking properly. What is a little difficult about this sauce is that if the butter is too hot or cold, the sauce will crack. It requires some technique, but do not give up.

Step 4

Finely chop spring onions and finish the sauce. Season with salt, pepper and lemon juice. Finish by adding the spring onion and serve immediately. This is a sauce you need to make right before serving.
