Grilled Squash topped with goodies - Incredibly good taste combination.
Squash, bacon and radishes with yogurt dressing!
Ingredients
Squash salad
- 1 pcs squash
- 1 pack bacon
- 5 pcs radishes
- 1 pcs chili
- olive oil, salt and pepper
- fresh herbs
Yogurt dressing
- 4 dl greek yogurt
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 pcs lime (juice only)
- 1 tsp salt
- 1 tsp sugar
- 1 tsp ground coriander seeds
- freshly ground pepper
This dish has an incredibly exciting combination of flavors and is perfect as an accompaniment to barbecue food. Grilled Squash along with crispy bacon, fresh chili and radishes. Topped with a fresh and sour yogurt dressing.
Step 1
Start by cutting the squash into slices of about 1.5 cm. Pour over a little olive oil, salt and pepper. If you want an extra nice look, you can make nice squares in the squash. Then it attracts a little more flavor and becomes even prettier when you grill them.
Cut radish and chili into thin slices and crispy bacon which you cut into pieces. I also tend to use some fresh herbs such as parsley on top. Now just take this tray out to the grill.
Step 2
Grill the squash on both sides until it has a golden surface, but is still a little crispy in the middle.
Step 3
Mix together all the ingredients for the dressing and store in the refrigerator for serving. Feel free to make a slightly large portion and put the rest of the bowl on the table as a good dressing / dip for the food.
Step 4
Place the squash on a platter and sprinkle with the other ingredients. Finish with a little good yoghurt dressing and the dish is ready to serve. This is perfect as an accessory to the barbecue food.
