Sriracha Chicken - Spicy chicken thighs on the grill.

Ingredients
- 4 pcs large chicken thighs
- 2 tbsp Sriracha
- 2 tbsp honey
- 1 tbsp fish sauce
Siracha chili sauce is now available in almost all small and large grocery stores. The sauce has a fresh and good taste of chili. These chicken thighs will be juicy and very tasty! It is always best to use chicken thighs when grilling instead of breast. Here comes a simple and good recipe.
Step 1
In this recipe I use the "thigh steak" the lower part of the thigh. I divide the thighs in 2 and save on the "clubs" for another dish. Use a sharp knife and cut off the bone from the chicken thigh.
Step 2
Mix together Siracha, honey and fish sauce. Put the thighs in this mixture and leave them for a couple of hours until overnight in the fridge. The chili sauce also helps to give a great red color to the chicken and the honey contains sugar and gives you the dark good grill color.
Step 3
If the thighs have leather on them, grill with the leather side down first until the leather is crispy. Turn around and continue grilling on the other side. It is smart to vary from direct heat at the beginning to indirect towards the end. Let the meat rest for 5 minutes before cutting it into neat slices. Feel free to use a thermometer for perfect core temperature. Perfect temperature is 72 degrees.
