Fried salmon with a lovely fish sauce - delicious for everyday and party!
When I eat fish I am very fond of a good sauce and this is a really good sauce.
Ingredients
Salmon and potatoes
- 1 000 gram Salmon
- 12 pcs potatoes
Fish sauce
- 2 pcs shallot
- 1 pcs tomato
- 1 pcs red chili
- 1 dl white wine
- 100 gram butter
- 2 tsp creme fraiche
- 0,5 pcs lemon (juice only)
- trout roe
- fresh dill
- salt and pepper
It is a butter sauce with flavors of lemon, shallots, dill, tomato and chili. Goes great with Salma salmon and some good potatoes. It does not take that long to make so you can make this on weekdays as well. But the dish is also great if you have guests or dinner parties. Top with delicious trout roe and you have a feast.
Step 1
Cut the fillets into suitable pieces for 1 person. Season the fish with salt and pepper and fry in butter. Make sure you do not fry the fish too much. Start at a slightly higher temperature so the fish gets a little crust and turn down the heat.
Step 2
Now we're going to make the good sauce. Find a frying pan. Cut almost all the butter into cubes and place in the fridge. Put the rest of the butter in the pan. Fry the shallots and chili until the onion has softened. Pour on the white wine and let it boil until it is almost reduced.
Step 3
Turn off the heat and find the cold butter cubes. Whisk in a little and a little butter until it becomes a smooth and fine sauce. Whisk in all the butter.
Step 4
When the butter has been whipped in, add the tomato, dill, lemon juice and creme fraiche. Season with salt and pepper. Keep warm on a low heat. It pays to finish this sauce just before serving.
Step 5
I served with Røsti potatoes for this dish, but it also goes well with other types of potatoes or rice. Place all the elements neatly on a plate and pour on some trout roe and a few tassels of dill. This is a dish that is quite easy to make and is guaranteed to impress your guests. Good luck.
