Cod in spicy tomato sauce - A pan full of good flavors!

This delicious cod dish is very similar to a classic Bacalao, but I have replaced the clipfish with fresh cod loins and added crispy bacon. I love this dish!

  • 800 gram fresh cod loin
  • 100 gram bacon
  • 2 bokser canned tomatoes
  • 1 pcs glass of grilled peppers
  • 2 pcs onion
  • 2 pcs carrot
  • 1 pack small potatoes
  • 5 cloves garlic
  • 2 pcs red chili
  • 3 dl water
  • 1 tsp balsamic
  • 2 tsp sugar
  • 2 tbsp tomato puree
  • 1 glass good olives without stones
  • olive oil
  • salt and pepper
  • finely chopped parsley

The cod flakes nicely and absorbs the taste from the spicy good tomato sauce. There are lots of good vegetables in the sauce! That the dish takes a short time to make is a big plus and it may soon be that more people like this better than a classic Bacalao. Give it a try and evaluate for yourself!

Step 1

Turn the oven to 200 degrees hot air. Start by finding a large fireproof pan and a baking tray with baking paper. In the fireproof pan, add the mashed potatoes and add a little oil, salt and pepper. Put in the oven. Place the bacon on the baking paper and put these in the oven as well. It's so much easier to roast bacon in the oven.

Find a pan and add plenty of olive oil. Finely chop the onion and carrot and place in the pan. Cook until the onion has become shiny. Add tomato paste, sugar, garlic and chili and cook for a few minutes.

Step 3

Add grilled peppers, canned tomatoes, olives and water. Mix well and cook further. Add a little balsamic vinegar and season with salt and pepper.

Step 4

Take the bacon out of the oven when it has a golden color and looks fried.

Pour the tomato sauce over the potatoes and mix well.

Step 6

Bake for a total of 45 minutes. 10 minutes before serving, take the pan out of the oven and place large pieces of cod loin and sprinkle over the bacon. I like to add a few extra drops of olive oil and the fish and a little salt and pepper. Put back in the oven.

When the fish has been in the oven for about 10 minutes, the whole dish is ready. Check that the fish is ready in that it flakes nicely when you poke at it with a knife. Finish by sprinkling over some fresh parsley and serve. Now just enjoy this delicious dish! Good luck.
