Happy veiled peasant girls - A Norwegian classic with a little twist
The salty caramel sauce makes the veiled peasant girls extra happy!
Ingredients
Apple sauce
- 4 pcs apples
- 2 dl water
- 1 dl sugar
- a little lemon juice
Crumble
- 10 pcs rusk
- 2 tsp cinnamon
- 2 tsp sugar
- 50 gram butter
Cream
- 2 dl whipping cream
- 2 dl sour cream
- 2 tbsp sugar
- 1 tsp cinnamon
Butter-fried apples
- 3 pcs diced apples
- 2 tsp sugar
- 2 tsp cinnamon
- 2 tbsp butter
Salt caramel sauce
- 2 dl sugar
- 2 tbsp butter
- 2 dl cream
- 1 tsp maldon salt
This is a very classic Norwegian dessert! It is easy to make and tastes very good. I have made some changes that I think give an even better result and added a little extra caramel that goes well with apples and cinnamon. Test this version!
Step 1
Start by making the apple sauce. Peel and roughly cut the apples. Put them in a saucepan and add water and sugar.
Step 2
Boil for about 20 minutes and stir well. I squeeze in a little lemon juice to get extra acid in the apple sauce. Put in the fridge until serving.
Step 3
This cream combines cream and sour cream which I think gives an absolutely fantastic taste. Add cream, sour cream, sugar and cinnamon to a bowl and whisk together until it has a firm cream.
Step 4
Roughly crush the breadcrumbs. Put a frying pan on medium + heat and melt the butter. Pour in the breadcrumbs and sprinkle with sugar and cinnamon. Bake for a few minutes until golden. Let them cool down and store dry until serving.
Step 5
I cut the rest of the apples into small neat cubes and place in a bowl. Sprinkle with sugar and cinnamon and shake well so that the spices are evenly distributed on the apples. I fry these in a little butter just before serving so they are a little warm. Cook for a few minutes until they get a slightly caramelized surface, but are still a little crispy inside.
Step 6
Finally, I make the salty caramel sauce. Pour sugar and a little water into a frying pan and mix together. Turn on medium heat and wait until the sugar has turned golden and fine. Do not stir when making caramel until the sugar has turned light brown. Pour in butter and stir. Once the butter has melted in, add the cream and cook for a few minutes. Finish by adding good maldon salt and stir. Let the caramel cool down. It thickens a little extra when it cools down so well that it is quite runny.
Step 7
Now all the ingredients are done. It is important that you finish the dessert just before serving to keep the crispiness in the dish.
Step 8
Layer apple sauce, caramel, crumble, fried apple pieces and cream. Finish with cream and top with apple pieces, crumble and caramel. Serve immediately and enjoy this delicious Norwegian dessert.
