Healthy chicken balls with carrot and sweet potato - popular for young and old!

This is a simple everyday dinner that is popular with young and old. In addition, this is a super dish to get young and old to eat more vegetables. In this recipe I have used chicken mince and good spices. You can easily make this in less than 30 minutes and the leftovers are perfect for lunch or in the food package for the children. The delicious chicken sauce with coconut milk tastes incredibly good and if you want to make the dish extra tempting, you can add some cheese that is gratinated in the oven.

  • 3 pcs sweet potato
  • 3 pcs carrot
  • 7 dl chicken broth
  • 1 dl breading flour
  • 1 tbsp butter
  • 1 tbsp wheat flour
  • 1 can coconut milk
  • salt and pepper

In order for this to become an everyday dish that is made in a short time, the order is important. Start by setting the oven to 200 degrees hot air. Find a medium-sized pan and add chicken broth or 7 dl water and 1 chicken bouillon cube.

Put the heat on the pan so the broth starts to boil. Now you can start peeling the sweet potato and carrot. Divide into suitable pieces and add the broth. Turn down the heat and let them simmer for 10 minutes.

When the vegetables are cooking, it's time to make the chicken balls. This is a very simple version. Put the chicken mince in a bowl and add spices and breading flour (possibly breadcrumbs).

Stir well so that all the spices are mixed in well. The breading flour makes the dough a little firmer and it becomes easy to make the chicken balls.

Use clean and damp hands and shape into fairly large balls. Find a baking tray or pan and pour in a little oil on the bottom. This is so that the balls do not get stuck when they are baked. Put the balls in the oven and bake for about 10 minutes.

Using a strainer, pour in the vegetables. Keep the boiling water, because you will use it for the sauce.

Find a new and smaller pan and add butter. When the butter has melted, add the flour and stir well. Now dilute with the hot broth. Now you get a smooth and nice sauce that tastes of chicken and vegetables. Add the coconut milk and cook for 5 minutes. Season with salt, pepper and possibly a little lemon if you think the sauce lacks a little acidity.

Now take the chicken balls in the pan out of the oven and pour over the vegetables and the sauce. Put back in the hot oven and cook for another 5 minutes. If you want, it is also very good with a little cheese on top before the last frying.
