Homemade Spicy Bread Crumbs - Transforms dry bread into magic spice.

Ingredients
- 500 gram dry light bread (ready baked)
- 1 tbsp sea salt
- 1 tbsp ground pepper
- 1 tbsp mustard powder
- 1 tsp garlic powder
- 1 tsp cayenne pepper
Food waste is a problem in this country and one of the products most thrown away is bread that is no longer completely fresh. If you have first started making homemade bread crumbs / breading flour, you will continue. Once you have made this, the bread lasts for several months and you can use it in very many dishes. Use this as a topping on gratins, for breading or for stuffing products such as meatcakes, meatballs, etc. It is stupid to buy breading flour in the store when you can make a much better product at home.
Step 1
Cut the dry bread into large cubes. I quickly put them in a blender to get a little smaller pieces.
Step 2
Place the bread pieces on a baking tray with baking paper. Set the oven at 150 degrees and insert the tray. The baking time will vary slightly with how dry the bread is. The bread should have a golden and nice color, but not be burnt. I usually fry for 20 minutes. Then I mix the bread a little for a smoother baking and bake for about 20 more minutes.
Step 3
Now run the dry and baked bread in the blender again. You can choose the consistency of the breadcrumbs yourself, but I like that it is like coarse sand. Put a bowl on a scale and pour over the breadcrumbs. Adjust the weight in the recipe and the amount of spices adapts to the number of grams of breadcrumbs. I have based myself on 500 grams of breadcrumbs. Pour in the spice and mix well.
Step 4
Allow the breadcrumbs to cool completely before pouring them into an airtight box. Now you have a wonderful bread crumb that lasts at least 1 month in the fridge. If you have made a lot, you can also successfully freeze part of the mixture. Good luck!
