Homemade Pie with chorizo and squash - Crispy base and delicious filling!

I think pie is incredibly good. There is something about the combination of the crispy delicious pie base, the egg filling and what you choose to have in the pie. That is the perfect thing about pie. Here you can have in almost exactly what you want. Pie can be served piping hot, but also suitable chilled.

It is a good idea to start with the base because it takes some time to make. The nice thing is that it can be made the day before if you want. To get the best result, I fry the base first without filling and then with the filling in. This gives a well-baked and crispy pie base.

Ingredients

Pie in 28 cm pan

Recipe pie base

  • 250 gram wheat flour
  • 1 tsp salt
  • 180 gram butter
  • 3 tbsp water

Recipe filling

  • 1 pcs large chorizo sausage
  • 0,5 pcs squash
  • 1 pcs red onion
  • 100 gram cheese
  • 6 pcs egg
  • 1 dl milk
  • 2 tbsp creme fraiche
  • salt and pepper

Step 1

It is actually very easy to make a pie crust. Start by pouring the wheat flour and salt into a food processor and add the butter in cold cubes. Run for a few seconds until the butter has been distributed in the flour and it has a sandy consistency.

Then add the water little by little until you have a firm dough. Collect the dough and place on a baking paper. Form the dough into a thick circle and place on baking paper.

Put a baking paper on top as well and wrap. Leave the dough in the fridge for 30 minutes.

Now unpack the baking paper and roll out the dough with baking paper on both sides. This makes it very easy to get the dough into the pan and there will be little mess. This recipe is intended for a shape of 26-30 cm. Carefully remove the baking paper on one side and place the side without baking paper in the greased pan. Carefully remove the other baking paper and distribute the dough nicely in the pan and press firmly on the edge. Cut off extra dough. Hole the dough with a fork in the base and put the base back in the fridge.

Let the dough stand for about 15 minutes. During this time you can make the filling for the pie. Fry the chorizo in a pan. When the sausage is well cooked, I add onions and squash. Bake for a few minutes until golden and soft. Turn off the heat and add the sweet peppers. The paprika does not need much time because then it gets a better consistency. Leave this mix in the pan until you are ready to use it.

Mix together eggs, milk, sour cream and season with salt and pepper.

Now the dough must be pre-baked. Find a baking paper and curl it well. This makes it much easier to shape on top of the dough. Place the paper on the cold pie base and fill with dried peas or something else that does not burn.


This means that the base keeps a much better shape when it is fried. Bake for 15 minutes at 200 degrees with top and bottom heat. Take out the base and remove the baking paper with peas (make sure they are hot and dull to pick up from the floor if you lose them).

Place the chorizo filling in the bottom of the pie dough and pour over the egg mixture. Pour over grated cheese and put back in the oven at the same temperature. Bake for about 25 minutes until the filling is firm and the edge has a golden and nice color.

Now the pie is ready to be enjoyed. Divide it into large and good pieces and serve hot. It is very good with a fresh and light salad. Good luck.
