Homemade is always best!
Ingredients
- 1 kg cabbage
- 2 pcs apples
- 6 dl apple juice
- 3 tbsp vinegar 7%
- 2 tbsp sugar
- 1 tsp white pepper
- 3 tbsp caraway
- 2 pcs shallots
- 1 tbsp butter
- salt and pepper
Sauerkraut is an important component for Christmas dinner. I don't mean to offend anyone, but I get a little bit sad when I'm served a store bought Sauerkraut to the most important meal of the year. Once you know how easy it is to make at home you won't buy it at the store ever again. I will now show and explain how easy it is to make a delicious Sauerkraut. You can also make this a good amount of time before Christmas and just put it in the freezer until you need it. Make a large portion, this goes perfectly with sausage, ham steak and other dishes.
Step 1
Start with melting some butter in a large pot. Thinly slice shallots and place them in the melted butter. Cook on medium heat so the shallots get soft. Now we can start cutting up the cabbage and the apples.
Step 2
Peel the apples if you want to and cut them into thin pieces (remove the core). Cut the cabbage into thin strips. I like to first cut the bottom off, then remove the outer layers and use a mandoline to slice it up. You can also just use a knife. Don't use the core of the cabbage. First place the cabbage in the pot, then the apples and pour some apple juice and vinegar into the pot. Mix it together and let it cook for 45 minutes on medium heat with the lid on.
Now you can add sugar, pepper and vinegar to get the taste you prefer. Let it simmer for an hour without the lid on till you get the consistency you want.
Step 3
Before I serve it I like to mix in some pork belly fat or stock for even more taste. If you're not going to serve it right away, pour it in an airtight container and place it in the fridge or the freezer. This is going to bring the Christmas dinner up a notch! Good luck!
Step 4
Vacuum sealing foods is smart and practical. The food stays good for way longer and there wont get damaged from freezing it down. If you cant vacuum seal it, you can use a freezer bag and squeeze out as much air as you can before freezing it down. Sauerkraut can stay in the freezer for many months. So for a more peaceful Christmas, make it ahead in a large quantity.
