Homemade Tomato Soup - Full of nutrition and incredibly good!

A nutritious and very good tomato soup!

  • 12 pcs good tomatoes
  • 2 tbsp tomato puree
  • 2 pcs carrot
  • 1 pcs onion
  • 1 pcs red chili (optional)
  • 2 stenger celery sticks
  • 3 cloves garlic
  • 1 liter broth chicken/bull/vegetable
  • 1 tbsp balsamic
  • 1 tbsp sugar
  • olive oil
  • salt and pepper
Ingredients

A little white powder full of e-substances from a red bag can never be compared to a real tomato soup! This soup is full of vegetables and tastes great! Baking the tomatoes in the oven gives an extra good taste.

Step 1

Start by cutting the tomatoes in 2 and place on a baking tray with a little good olive oil. Add a little olive oil on top also together with salt, pepper, sugar and balsamic vinegar. Put in the oven and leave at 190 degrees for about 1 hour. This gives a very good, sweet and concentrated taste of tomato. See what the tomatoes look like after 1 hour in the oven.

Find the rest of the vegetables and cut into small pieces.

Step 3

Find a slightly large saucepan and fry the vegetables in a little olive oil on medium heat until they have become soft and golden. Add tomato puree and cook for a few more minutes. It is important to fry a little after you have added tomato puree as this gives the tomato puree a far better taste.

Step 4

Pour in the broth and the baked tomatoes.

Step 5

Let cook for 10 minutes and run smoothly with a hand mixer. Season with salt and pepper. I like to garnish the tomato soup with a few drops of good olive oil and a few drops of cream. Feel free to add some fresh herbs and serve. Today I serve the soup with Everyday Focaccia with spelt flour - Simple and very good. and Whipped butter - Perfect butter for good bread!
