Huevos Rancheros - simple, spicy and ridiculously good

Huevos Rancheros means eggs from the ranch / farm. This is a rustic, spicy and ridiculously good dinner, lunch or breakfast. The taste of the spicy tomato sauce together with bacon, mozzarello and eggs is an unbeatable combination. The whole dish is fried with a lid and all the good flavors melt together. Serve with good bread. The dish is inspired by the Danish brothers Price.

  • 4 tbsp tomato puree
  • 2 pcs red chili
  • 1 pcs onion
  • 3 cloves garlic
  • 1 pack bacon
  • 1 pack fresh mozzarella
  • 1 tbsp red wine vinegar
  • 2 tsp cummin
  • 1 tsp chili powder
  • 2 tsp smoked paprika spice
  • finely chopped parsley
  • well toasted bread

Step 1

Start by frying bacon in a large frying pan. Use a frying pan that you can put in the oven or you have a lid for. The perfect thing here is a pan you can put on the fire afterwards, but it does not always fit. When the bacon is done cooking, take them out of the frying pan and set aside.

Step 2

Add onion and chili and fry in the fat from the bacon. After a few minutes add the garlic. When these start to turn golden / soft, add a splash of red wine vinegar (about 1 tablespoon), tomato paste and 2 teaspoons sugar. Fry this a bit before adding a can of canned tomatoes (Mutti is the best). Now you have to taste the sauce with spices. This should be a spicy dish, so do not be wary of the chili spice. When you are happy with the taste of the sauce, cut the crispy bacon and add to the sauce.

Wait 5 minutes and the sauce is ready. Pull the frying pan aside and make 4 small indentations in the sauce. Hatch an egg in each indentation. Spread well with fresh mozzarella over the whole frying pan and sprinkle over chopped parsley. It should look a bit rustic!

Now put the whole frying pan in the oven / grill / fire or put on a lid. Cook until the egg whites are firm and the yolks are still runny. Then the dish is ready and you just have to start eating. Serve from the pan with toast.
