I have a love for Italian pizza. I have always had and will always have.
Ingredients
- 500 gram Pizza flour tipo 00
- 2 tsp dry yeast
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- 310 gram tempered water
This is the recipe and method I use when I make Italian pizza. The result is a delicious thin and crispy pizza base just the way I like it.
Step 1
Mix all the dry ingredients in a food processor and mix together. Pour in olive oil and water and drive on medium speed for 15 minutes. Add a little more liquid or flour until you get a perfect consistency on the dough.
Step 2
Put some flour on the bench and pour out the dough. Knead it together and place in a bowl. Put on plastic wrap and let rise for about 30 minutes to double size.
Step 3
Knead the dough once more and divide into 4 equal pieces. Each dough should weigh about 190 grams. Roll together into fine and round buns.
Step 4
Place on a tray with oil. Rub on a little temperate water and cover with plastic wrap. You do this to keep the base supple and the edges not to become dry. Raise outside for about 20 minutes and put in the fridge.
You can leave the base to rest in the fridge for several hours or prepare the pizza bases the day before you make the pizza. The pizza is best if it is baked on high heat and feel free to use a pizza stone in the oven for an extra crispy bottom.
