Long-fried high ribs- Tender, juicy and almost self-made.
High ribs is a reasonably priced piece of beef and has a very good taste, but it needs some time to become perfect. The chefs call this method to braising meat.
Ingredients
- 2 kg high ribs of beef
- 2 pcs red onion
- 3 pcs carrot
- 1 pcs red chili
- 7 cloves garlic
- 1 tbsp worcester sauce
- 4 dl water
- 4 dl dark beer (Guinness)
- 3 pcs star anise
- salt and pepper

That is, fry quickly first before it is left with a lid for a long time together with a little liquid. I like to finish the last time in the oven without a lid. Then more of the liquid evaporates and the flavors concentrate even more. The meat also gets a little extra crust. When the meat is done, it is incredibly tender and the taste is absolutely fantastic. Serve with a delicious mashed potato and you have a cheap and fantastic Sunday dinner or feast. Make a little more because there will be leftovers of the meat, you can use this for tacos, sandwiches, stew, soups and much more.
Step 1
Start by slicing the meat. I show in detail in the video below how to do this. Cut off tendons, but leave all the fat on the meat. Divide into large pieces (about 100 grams per piece). Season with plenty of salt and pepper just before frying the meat. Pour neutral oil into a frying pan and fry the meat quickly on high heat on all sides until you get a golden and fine crust. When the meat is done cooking, place it in a fireproof pan.
Step 2
If you have a pan with a lid, it's perfect, but it also works well with aluminum foil. When you have finished frying the meat, pour the water into the pan so you get all the good taste. Add star anise to the water and worcester sauce. When the pan is cooked clean, pour the liquid into the pan with the meat. I divide all the vegetables into fairly coarse pieces and put in the pan.
Step 3
Mix the meat and vegetables well and pour over the can of beer. Put on the lid and put in an oven preheated to 140 degrees. Leave for 2 hours, take it out and mix the meat gently. Remove the lid and cook for another 2 hours. The pan should stand in the oven for a total of 4 hours.
Step 4
Then just enjoy a delicious meal. Serve with a good homemade mashed potato!
