Cooked Red Cabbage - The side dish you NEED to pork belly!

Do not buy the pre-made cooked red cabbage! It is so easy to make at home and it tastes way better. When youre serving pork belly for Christmas, cooked red cabbage is a must have! Here is an easy and delicious recipe for cooked red cabbage. Ive tried many different variants, but this is definitely my favorite!

  • 1 pcs red cabbage
  • 1 pcs red onion
  • 2 pcs green apples
  • 3 pcs dried fig
  • 0,5 dl red wine vinegar
  • 1,5 dl blackcurrant syrup
  • 4 dl water
  • 1 pcs cinnamon stick
  • 1 pcs star anise
  • 3 tbsp butter
  • salt and pepper
  • pork belly fat

Step 1

Start with a large pot and add butter.

Melt the butter while you're slicing red cabbage and red onion in thin slices. I usually use a mandoline.

Cook the red cabbage and the onions for a few minutes. Chop some green apples into thin slices and add it to the pot. Then add the red wine vinegar.

Let it simmer for a few minutes before you add anything else. After a few minutes you can add blackcurrant syrup and water, stir it around. Then add a stick of cinnamon, a couple star anises and a good amount of salt and pepper.

Put the lid on and turn the heat down to low. Let it cook for one hour. Then add some chopped dried figs.

Let it simmer for another 30-45 minutes, it depends on how thin your red cabbage is. Some of the liquid will evaporate. Before you serve it, add some pork belly fat or stock. You can make this a couple of days before Christmas and keep it in an airtight container in the fridge till Christmas day.

It feels so much better to serve your guests with homemade cooked red cabbage and sauerkraut. It raises the whole dinner experience up a notch. Good luck!
