Gladkokken's rib sauce - apples, spices and good broth
A good sauce is important to complete a meal.
Ingredients
Rib sauce
- 7 dl rib broth (from the pan)
- 3 dl spicy apple juice
- 3 tbsp wheat flour
- 3 tbsp butter
- 1 tbsp rib fat
- salt and pepper
Spicy Apple Juice
- 4 dl apple juice
- 0,5 dl soy sauce
- 1 pcs apple
- 1 pcs onion
- 3 cloves garlic
- 2 pcs bay leaves
- 1 tbsp whole black pepper
- 1 tbsp mustard seeds
- 2 pcs green cardamom seeds
- 2 pcs star anise
I have received many questions about how I make sauce for Christmas dinner and here it comes. For me, good tastes are important. If you have made ribs with my method you will be left with a fantastic broth. I think the rib meal is so fatty that it needs a little good acidity in the sauce. To bring this out, I mix the broth together with a deliciously spicy apple broth. Apple and rib are an excellent combination and this sauce has lots of good flavors of Christmas.
