Mediterranean potato salad - delicious warm potato salad with a taste of summer!

Sometimes I think it's incredibly good to make a potato salad that does not have a lot of sour cream or mayonnaise.

  • 1 kg potatoes
  • 4 tbsp olive oil
  • 2 tbsp balsamic oil
  • 1 tbsp dijon mustard
  • 0,5 pcs lemon
  • 1 pk asparagus tops
  • 1 pcs red onion
  • salt and pepper

This delicious potato salad is really flavored potatoes. Here there is a lot of good olive oil, balsamic vinegar that makes up the taste. Perfect salad that goes just as well with fish as with meat. In addition to the potatoes and the dressing, you can add exactly what you want.

Step 1

This is a simple salad to make. Start by dividing the potatoes into suitably large pieces. In a salad, it actually means a suitably large piece to put in your mouth without having to split it. Boil / steam the potatoes until they are tender in salted water. When they are tender, you can gently stick a fork into a potato and it will fall straight off again. This takes between 15-20 minutes.

For the last 2 minutes I cook asparagus in the same water. Rinse the asparagus in ice cold water. Pour the boiled potatoes into a strainer and let steam a little so all the water is gone.

Step 3

Stir together all the other ingredients in a bowl.

Step 4

Pour the potatoes back into the pan (make sure it is dry) and pour over the oil. Add finely shredded red onion and asparagus.

Season with salt and pepper and stir well. Put the lid on or cover with aluminum foil.

Step 6

In this way, the potato salad stays warm for a long time and the flavors get really absorbed into the potatoes. When you are going to serve, it looks nice to decorate with some fresh herbs / chives. Enjoy a lovely and slightly different potato salad. Good luck.
