Mexican Casserole - Smart everyday food "all in one pan"

  • 3 dl rice
  • 5 dl chicken broth
  • 1 pcs onion
  • 4 cloves garlic
  • 1 pcs sweet peppers
  • 2 tbsp tomato puree
  • 1 pcs red chili
  • 2 tsp brown sugar
  • 1 tsp salt
  • 3 tsp cummin
  • 2 tsp smoked peppers
  • 1 can canned tomatoes
  • 1 can chilibeans

Mexican casserole probably connects most people with a well-known bag food supplier and they sell millions of this bag. It's just as easy to make this yourself, it tastes much better and you know exactly what it contains. This smart method allows you to make a quick and good dinner and with a minimum of dishes as everything is made in the same pan. Here you get my recipe for a simple Mexican casserole that is popular with both young and old.

Step 1

Start by finding a good pan you have a lid for. Pour in a little neutral oil and fry the onion until it has become shiny and soft. Add finely chopped garlic and chili and cook for a few minutes. Add tomato paste, salt and sugar and cook for 2 minutes. This means that the slightly bitter taste of tomato puree disappears. Add the chop dough and continue to cook while stirring.

Once the minced meat has been fried, add the rest of the spices, peppers, canned tomatoes and chilibeans.

Step 3

Pour in the chicken broth and rice.

Step 4

Mix well and stir until the pan starts to boil. Turn the heat down to low heat and put on a lid. Stir occasionally. The casserole is ready when the rice is done. This takes about 20 minutes.
